A seminar exploring the recent revival of ancient grains in Tuscany and Sicily from a historical, nutritional, and business perspective. Discussion will revolve around the research and practices of food archaeology, agronomy, and nutritional science to analyze the ancient grains boom through a regional lens. Finally, the seminar will examine the economic and social implications of this renewed trend.
